Description
Texas native Jack Timmons had lived in Seattle for over three decades before studying the craft at BBQ Summer Camp at Texas A&M and touring Central Texas pit operations. He first tested the concept around town through the Seattle Brisket Experience before setting down permanent roots in the Industrial District, rounding out the smoked cuts with classic southern sides.
