Opened during the May 2020 lockdown with 25 years of ramen experience behind it, Hokkaido Ramen Natsuboshi takes its name from the owner's wish to become a star in Hawaiʻi. The signature broth is combined with shoyu or miso and finished with fishcake, menma, and green onions.
