Giovanni's Shrimp Truck

What began on the road in a converted 1953 bread truck centers on plates of a dozen jumbo shrimp with two scoops of rice. Choices stick to three preparations: scampi marinated in olive oil, fresh chopped garlic, and lemon butter, an award-winning Hot & Spicy sauce, or plain lemon butter. Alongside permanent North Shore locations in Kahuku and Haleiwa and an outpost in Kakaako's H Mart food hall, the setting carries its own participatory tradition: patrons sign the truck exteriors with markers, continuously layering decades of global graffiti.
