From Kaohsiung to Cambridge, Where You Fold Your Own Dinner
You roll, fold and eat what you made, at one long table in a Cambridge house that Patty Chen and Marc Shulman have run since 2013.
The hosts will not call this a class. Their own FAQ calls these parties, a place to swap stories, share handmade dumplings and bond with new friends and old. The distinction survives contact with the room. You stand at a long table with a rolling pin, a pastry mat and a bowl of filling in front of you, and you work for most of the session.
Patty Chen has been making dumplings since she was eight years old. Her family left Kaohsiung for the United States and opened a restaurant, and that restaurant is where she met Marc Shulman, now her husband and business partner. They both work the table alongside you.

Everything runs in English, in a house on Windsor Street in Cambridge. The full street address arrives with your booking confirmation, though the hosts publish the Windsor Street location openly on their own site. Groups stay small, though not as small as the booking form suggests. One booking takes up to eight travelers and the listing caps a shared session at ten, while the hosts put their own Windsor Street room at fifteen and their party page advertises up to sixteen. Plan for a long table rather than a private one.
The listing sells tickets from age six, while the hosts' own party page sets the floor at eight and up. The hosts publish both numbers themselves, so the lower one is not a listing error. A six or seven year old sits inside what the hosts sell and outside what their party page advertises.

The couple have been opening rooms in this city for a long time. They opened the Taiwan Cafe in 1997 and the All Asia Bar in 2001, and out of those came a school for dumplings that became Patty Chen's Dumpling School in 2013. Their own account places the Dumpling Room at the end of that line.
What carries over from the restaurants is a taste for the twist. They build vegetable-infused skins and vary the fillings, and a single session covers four to five folding styles.
Four or Five Folds, Two Fillings, a Box to Carry Home

The four to five styles refer to folding technique. Public sessions run two fillings, pork and ginger plus a vegan one, with no substitutions allowed. Custom fillings exist, though only for private bookings.
Dinner is part of the ticket along with tea and coffee, Taiwanese street food bites round out the table, and the listing says guests may bring their own bottle. Most parties end with leftovers to carry home.
There is no gluten-free option here. The dough contains wheat, and the hosts say so plainly.
Birthdays, Team Outings, and a Table You Share
The hosts pitch the format at team building, birthdays, bachelorette nights and couples, and the room supports all four. You sit facing other people across a table, and the work moves slowly enough to talk through.
Families fit too. The hosts' party page puts the floor at eight and up, and children that age roll and fold alongside adults. Pricing runs as one per-person rate with no separate child ticket. Bringing a children's group means one adult for every five children, and that adult buys a ticket too.
Parking is the tight part. The hosts count three spaces in the driveway and point to garages close by, and the listing describes the on-site parking as free. Arrive in more than one car and someone is walking from a garage.
Book Two Days Out, and Watch the Clock on Refunds
Booking closes forty-eight hours before the start time, and the full refund line sits at twenty-four hours. Those are two separate deadlines, and missing the first one closes the booking altogether. Confirmation is instant once you book.
The operator can cancel a session that does not fill, so a thin weekday slot carries more risk than a weekend one. Weather is not a cancellation trigger, which follows from all of it happening indoors.
The two sources disagree on length. The booking holds three hours, while the hosts' own FAQ puts every event at two to two and a half. Work from two and a half and you will not sit waiting on a third hour that was never scheduled.
Once the confirmation lands, the rest is easy. The house sits on Windsor Street in Cambridge, the driveway holds three cars, and garages cover the overflow.
You leave with the recipes, the technique and, on most nights, a box of what you folded. The hosts have run almost 2,500 of these parties, and by their own count only a handful of groups have ever finished every dumpling.
