The kitchen traces directly to Kristina Pan’s father and his record-setting Formosa buns (水煎包) in Taiwan. Before opening, Pan spent three decades in New York managing sushi chains and running her own restaurants. Returning to those roots, she dedicated the endeavor to fine-tuning the recipe and bringing these savory buns to a wider audience.
