ETNA DULCIS

Started as a family passion, ETNA DULCIS serves as a tribute to Sicily and its volcano, born from summers spent on the island. The centerpiece pairing carries deep roots: granita traces its origins to Arab rule on the island, when the freezing of fruit mixtures was first introduced and refined over centuries into a delicate sweet. It is served alongside brioche col tuppo, a buttery, soft bread shaped with a little topknot, recreating an indulgence traditionally eaten for breakfast or in the afternoon.
