Operating since 2014, Escala reflects the cross-continental life of its founder, Chino—born in Seoul, raised in Bogotá, and shaped by Los Angeles and Brooklyn. The kitchen expands its Colombian-Korean core with American comfort food, evolving from an opening menu crafted by Chef Chris Oh to subsequent additions from Colombian chefs Alex DJ Skull Torres and Juan Camilo Sanchez. The space draws on urban art and culture, maintaining a laid-back dive-cantina energy geared toward cocktails and group celebrations.
