Started in 1998 as a small shop in Houston's Greater Heights, El Bolillo built its following on great customer service and a vast daily spread of traditional Latin pastries. The cases center on a pan dulce heritage with roots in France and Spain that developed across Latin America over centuries, rounded out by desserts and custom cakes.
