El Bolillo began in 1998 as a small bakery on Airline Drive in Houston's Greater Heights, building its following on great customer service and hundreds of everyday Latin pastries. The bakery turns out 150 varieties of traditional pan dulce, pan salado, pastries, and desserts, all handmade fresh daily. That broad selection draws on family pan dulce traditions that spread across Latin America over centuries, rooted in French and Spanish baking.
