Born as a 2011 Los Angeles food truck before expanding out of Grand Central Market, Eggslut sets up just inside the main entrance at Rio. The focus stays firmly on cage-free eggs, led by the Fairfax with caramelized onions, cheddar, and sriracha mayo and a bacon-and-egg build accented with applewood smoke and chipotle ketchup. House-made turkey sausage completes the sandwich roster, flanked by sides like truffle hashbrowns and buttermilk biscuits and baguette slices served with the signature Slut.
