A College Park kitchen turning out fiery Szechuan heat, from tingling dry hot pots to tender boiled fish in chili oil.

Description

Beyond the headline spice, the kitchen balances regional traditions with everyday variety. The Mapo Tofu is made vegan to adapt to local tastes, keeping its numbing kick from a Szechuan pepper sprinkle alongside plates of double-cooked pork belly and pork trotters reminiscent of Taiwanese popcorn chicken. The lineup extends well past chili oil to include soup dumplings, rice noodle soups, and American Chinese fried dishes. Plates arrive together in a clean setting, and generous portions frequently stretch into next-day leftovers.
