Description

The kitchen traces its recipes through a lineage running back to San Francisco’s Vicolo and Los Angeles’s Zelo. That heritage centers on crust prepared by hand using organic cornmeal stone-ground at Bob’s Red Mill, sustainably grown flour, and pure olive oil.

The rest of the operation is equally hands-on. Dressings, marinades, and brines are made in-house daily, while Carlton Farms pork anchors a dedicated charcuterie effort: the team cures its own pancetta, Tasso ham, and corned beef and cases sausages from andouille to bratwurst.
