Hospitality veteran Todd Lunger co-founded the shop alongside Marc Marrone, sourcing Audubon-certified beef directly from their own ranches across Arizona, South Dakota, Kansas, and Missouri. The space pairs a full-service butcher counter with deli counters modeled directly on the markets of Arthur Avenue in the Bronx.
