Diamond 9 Barbecue began in 2014 as a backyard pop-up while owner Pudge Padgett was stationed at Fort Lewis, Washington. The operation has since grown into a full-service restaurant and caterer located at Tag’z Premier Meat Shop, serving pulled pork and unique sandwiches alongside its signature brisket.
