Founded by a Havana-born musician and an American partner, Cubo began in 2010 as a downtown food cart before expanding into casual brick-and-mortar spaces. The cooking draws on traditional Cuban flavors shaped by Italian, African, and Spanish culinary influences, with simple dishes tailored for broad dietary needs.
