Before opening in 2008, the restaurant's founders drew on a coastal Vietnamese upbringing and years spent working as a fisher in the United States. That background directly informs their twist on Viet-Cajun seafood, merging southern Cajun seasonings with Vietnamese flavors. The kitchen centers on crawfish recognized for their size and taste, served alongside orders of Shrimp Diablo, fried shrimp, and classic boiled shrimp.
